Carrot Koshambari

Hi all, I am a new-bee in the world of blogging. I came across some of the blogs some months ago like shilpa’s http://www.aayisrecipes.com/, and sailaja’s www.sailusfood.com. Love your sites. You two have really inspired me to share my recipes with my near and dear ones through blogging.

Carrot Koshambari

Carrot Koshambari (grated carrot salad) is one of my favourite salads. One of the easiest Indian salads probably. Grate the carrots and temper it with cumin seeds and mustard seeds. Here is how I make it.

  1. Peel the skin of the carrots and grate them. I use a grater which gives out very thin grated carrot. Put the grated carrot in a bowl.
  2. For tempering: Heat some oil. Put some mustard seeds, when they pop put some cumin seeds and curry leaves. I put dhaniya powder and turmeric powder and some hing(asafoetida).
  3. Pour this tempering on the grated carrots. Add sliced green chillies, salt and lemon juice and garnish it with fresh or desicated coconut. If you are not a coconut premi (lover)…garnish it with chopped corainder leaves.
