Green Beans Upperi or Upkari

Beans Upperi(Malayalam) or Upkari(Konkani) is a vegetable side dish that I make from fine long green beans. It is one of the fastest vegatble dishes that one can make when we are in a hurry to do something. Here is how I make it.

Green Beans Upperi or Upkari

  1. Cut and wash the fine green long beans.
  2. Heat some oil in the saucepan and add mustard seeds(rai in hindi) when the oil is heated. When the mustard seeds crackle, add urad dal and then add the curry leaves with a pinch of hing(asafoetida).
  3. Add the washed beans and mix. Add some cut green chillies. Let this cook till it becomes tender and eatable.
  4. Once done, garnish it with fresh coconut (if no fresh coconut, I usually pour some coconut oil to have that native feeling). Enjoy best with curd and rice….Miss my ajji….
